A smooth, vibrant twist on the classic Italian liqueur — infused with fresh lemons and rich vanilla for a perfectly balanced, refreshing treat, create your own and make it as sweet or tart as you desire. It’s delicious added to cocktails and desserts. We love adding the vanilla to give it a nice, subtle vanilla flavor. We’re thinking... limoncello spritzers and lemon tiramisu. Yum!

Ingredients:
· 10 lemons (peels only)
· 16 oz Everclear
· 2 Ecuadorian vanilla beans for a subtle vanilla softness
· 1 cup Vanilla sugar (Regular granulated works too)
· 2-4 cups water
Instructions:
1. Wash with boiling water 10 lemons to remove the waxy film on the outside of the rinds
2 . Peel them, being careful not to include the pith (the white part). Pith=bitterness.
3. Add the peels of the 10 lemons, Everclear, and vanilla (Sliced and cut in thirds) to a glass jar and store for 3-4 weeks in a cool, dark place. Make sure all the ingredients are submerged in the alcohol.
4. After 3-4 weeks, strain out the liquid. (Save the vanilla and lemon to make lemon vanilla sugar! Save, dry, and grind.)
6. Make a simple syrup with 1 cup vanilla sugar to 2 cups water (plain granulated sugar works too). Heat until the sugar is dissolved and cool.
7. Add the cooled simple syrup to the limoncello and 1 cup of water, stir and taste-test. If it's still too strong, add another 1 cup water between taste tests. I usually add a total of 3 cups water. Two cups in the simple syrup and 1 cup after. But you get to make it to your liking:).
** Another option is to add lemon juice instead of water in your simple syrup for an even more lemony, zesty flavor**
