Ginger-Spiced Vanilla BBQ Sauce
This sweet-meets-savory BBQ sauce gets a flavor boost from Ginger Spiced Vanilla Extract (p.142, The Art of Extract Making). Perfect for glazing grilled meats, stirring into stir-fries, or drizzling over roasted veggies.
Ingredients

1 tablespoon vegetable oil

1 clove garlic, minced

½ medium yellow onion, minced

2 tablespoons Ginger-Spiced Vanilla Extract

1 teaspoon kosher salt

2 cups ketchup (reduced sugar preferred, unless you like it sweeter)

3 tablespoons molasses

3 tablespoons rice vinegar

1 tablespoon light brown sugar

2 tablespoons Dijon mustard

2 tablespoons Worcestershire sauce

2 tablespoons toasted sesame oil

1 tablespoon soy sauce

1 teaspoon ground black pepper
Instructions

Heat vegetable oil in a medium saucepan over medium heat.

Add garlic, onions, and salt. Sauté until softened, about 2–3 minutes.

Stir in ketchup, molasses, vinegar, brown sugar, mustard, Worcestershire, sesame oil, soy sauce, and black pepper.

Simmer uncovered, stirring often, until thickened (about 12-15 minutes).

Remove from heat, then stir in the Ginger-Spiced Vanilla Extract.

Blend with an immersion blender (or carefully in a food processor) until smooth.
