Dairy-Free Vanilla Bean Ice Cream with Peppermint Patina

Ingredients

2 cans (13.5 oz each) full-fat coconut milk

½ cup Good Maple Syrup (or agave)

1 Tbsp Peppermint Patina extract

Optional: Squeeze the caviar from 2 vanilla beans removed from your finished Peppermint Patina extract (adds extra vanilla flecks and more patina flavor)

1 pinch sea salt

Optional for texture: 1–2 tsp vodka (helps prevent the ice cream from freezing too hard)
Instructions
1. Freeze the bowl
Place your ice cream maker’s freezer bowl in the coldest part of your freezer for at least 24 hours (48 hours is even better for older machines).
2. Blend the base
Add the coconut milk, sugar, vanilla, sea salt, Peppermint Patina extract, to a high-speed blender or mixer. Blend for about 1 minute, until completely smooth and creamy.
3. Chill the mixture
Transfer the mixture to a covered container and refrigerate for at least 2 hours, or overnight. The mixture must be very cold before churning.
4. Churn
Turn on your ice cream maker and pour the chilled mixture into the frozen bowl. Churn for 20–25 minutes, until it reaches a soft-serve consistency.
5. Freeze
The ice cream will be soft when finished churning. Enjoy right away, or transfer to a container, cover, and freeze for 4–6 hours for a firmer, scoopable texture.
