- Pompona Vanilla — Peru or Madagascar — bold, exotic, and unlike any other vanilla in the world. Pompona beans are prized for their thick, fleshy pods and intensely rich, fig-like sweetness with deep, almost wine-dark complexity. Availability determines whether this comes from Peru or Madagascar — both deliver the same extraordinary Pompona character that anchors this blend with unmistakable autumn depth.
- Mexican Veracruz — creamy, smooth, and classically rich. The birthplace of vanilla itself, Veracruz beans bring warm spice, dark chocolate undertones, and a timeless depth that feels made for cool autumn evenings and holiday baking.
- Sumatra Indonesian — deep, earthy, and richly spiced. Full-bodied and grounded, Sumatran vanilla brings a warm, woody complexity that evokes fallen leaves, spiced cider, and the quiet richness of the season at its peak.
- Comoros — grown on the volcanic islands of the Indian Ocean, Comoros vanilla beans are celebrated for their distinctively sweet, marshmallowy richness.
