As we look forward to cooler fall days, this rice pudding is sure to warm you up and put a smile on your face. Cuddle up with a bowl of this rich, custard like creamy goodness; just like Mom used to make. Enjoy!
Ingredients
-1 1/2 cups white rice, cooked
-2 cups milk, divided
-1/3 vanilla sugar
-1/4 teaspoon salt
-1 egg
-1/3 cup raisins or dates
-1 tablespoon butter
-1 vanilla bean, split
-2 teaspoons vanilla extract
- A sprinkle of Holiday Mingle extract or Cinnamon.
Instructions
1. In a saucepan mix the cooked rice, 1 1/2 cups milk, sugar, salt, and vanilla bean. Cook uncovered over medium heat for about 15-20 minutes until thick and creamy. Stir frequently to prevent the rice from sticking, remove the vanilla bean.
2. Whisk egg and remaining 1/2 cup of milk in a bowl, add 1 cup of the hot rice mixture to the egg while whisking. Stir the egg mixture and raisins into the rice. Cook 2 minutes more.
3. Remove from heat and stir in butter and vanilla. Serve warm and garnish with a sprinkle of holiday mingle or cinnamon.
