Currently, the Mexican vanilla bean is one of the most expensive and sought-after beans on the market due to limited supply, especially during the summer months as farm yields decline in higher heat.
Our grade-A Mexican vanilla beans are grown in the tropics of Mexico that make up the most rich and diverse soils. When you open the package, you will immediately smell a dark vanilla aroma with hints of cocoa and mocha. Then, when you remove the beans you will smell an earthy bold vanilla with a hint of vanilla spice. If you use these beans to make extract, you will taste and smell a strong, concentrated, sweet vanilla with hints of chocolate, mocha and caramel. It is truly a wonderful and unique vanilla experience.
We have been sourcing Mexican vanilla for years. These are grade-A vanilla beans that are grown and cured in Mexico and they are in very short supply. Our farmers work hard, hand-pollinating each orchid, to deliver a beautiful and sweet vanilla bean.
Pricing on Mexican vanilla is lower than it has been in years, but given its limited supply, it is still one of the more expensive vanilla beans and it is susceptible to pricing fluctuations between seasons. These beans are rich and dark, with spicy and smokey tones, perfect for baked goods, sauces and other desserts. It's also fantastic when a teaspoon is added to seared or glazed salmon or chicken.
Today, very little of the world's global vanilla cultivation comes from Mexico. The Mexican Revolution, global warming, competition from Madagascar, drug cartels desiring land for drug production, etc. all contributed to a decline in Mexican vanilla bean production. But that trend is changing and in 2016 Mexico had its largest vanilla harvest in decades.
Most Mexican vanilla beans are harvested along the Gulf Coast in the Veracruz state, where the climate is amicable and the soil is rich with nutrition. These factors make a real, Mexican vanilla bean one of the most delightful and elegant vanilla beans on the planet.
Grade A Mexican vanilla beans are usually between 6" and 7" inches long and have a dark brown color. Typically there are 6-7 of these beans in an ounce. They are perfect for making homemade vanilla extract, home cooking or baking.
Some companies may try to sell beans that were grown in Madagascar and cured in Mexico as "Mexican Vanilla Beans" but they are not. The soil that they are grown in largely determines the taste, not where they are cured. Those who have tried multiple varieties of vanilla recognize pure Mexican vanilla beans as a gold standard that really is an experience that enlivens all the senses.
