He named it "New Caledonia" because the North East side of the island reminded him of Scotland.

And is that a hint of a raisin or a fig? After months (or even years) of extraction, your finished extract will demonstrate a powerful vanilla sweetness with traditional vanilla undertones but a rich creaminess that underscores this vanilla bean's propensity towards classic vanilla goodness. New Caledonia vanilla beans are very oily and high in vanillin content. In fact, when the first shipment arrived they were covered in vanillin crystals, demonstrating exceptional curing with high quality and an artisanship derived from a culture that only wants to ship the very best of what it offers to the rest of the world. These are long vanilla beans. Some of them measured 9" to nearly 10", but 6"-7" seemed to be the average. 

VanillaPura vanilla beans are all shipped vacuum sealed for freshness and should be stored unrefrigerated in a cool, dry and dark place.
