Allspice is derived from the dried berry of a plant called Pimenta Dioca.  As the name suggests and culinary professionals have noted for centuries, the allspice berry brings to mind all spices in one. The aroma and taste of this amazing spice is reminiscent of of nutmeg, pepper, a spicy cinnamon and sweet cloves, among many other wonderful smells and tastes. It's used in desserts and various cuisines from all around the world. It can be used in beverages, wines and ciders. It's truly one of natures most wonderful creations.

Do the varying origins of this spice contribute to a different taste? Yes, but given the potency of allspice, the difference may be somewhat difficult to notice. The origin of the allspice tree traces back to Jamaica. Today in Jamaica, the spice is known as Jamaican pepper or new spice. Even Columbus noted the find of this amazing little berry during his second voyage to the New World.

As word spread of this amazing new flavor, allspice cultivation began to spread around the world. We named this particular allspice The Leon, given its origin in Mexico. Leon is a beautiful, large and culturally rich city in Mexico that captures the vibrancy of this beautiful berry. The rich Mexican soil adds a spicy kick to the already-spicy allspice flavor and a subtile note of mocha.

Allspice can be ground into powder, but quickly loses its pungency and should be used quickly once ground. For this reason, we currently offer this beautiful spice in its whole form. 

While allspice is a great additive to your vanilla extract, it should also be a permanent addition to your spice collection for its use in desserts, pies, gingerbread, pumpkin bread and much more.
