Infusing vodka with a chai tea blend is a wonderful compliment to vanilla beans.  Chai is a strong flavor of black tea and a variety of spices with a hint of sweetness. Add vanilla beans and you just have happiness!  Vanilla chai tea extract can be used in spiced coffee cakes, chai cinnamon rolls, and chai spiced crème brûlée.  Add it to your tea and coffee for something extra special!

Makes about 7-8 oz extract.

Ingredients:

-3 Tbsp (24g) Loose-leaf chai tea blend

-1oz vanilla beans (Vanuatu is our favorite, but use YOUR favorite)

-8.4oz (250ml) Vodka

Instructions:

  1. Place the vanilla beans in the bottom of a 16oz jar
  2. Weigh or measure your loose-leaf chai tea blend then place it in a stainless-steel tea strainer.
  3. Place the strainer into the jar and pour in the vodka.
  4. Let it infuse for 2-4 hours, depending on how strong you like it.
  5. Remove the strainer with the tea, while allowing any vodka to drip back into the jar.
  6. Make sure all the vanilla beans are covered with vodka. Place the lid on the jar.
  7. Leave your vanilla beans to extract for up to 12 months or to your liking.

I bet this would be good in a simple, plain cookie recipe like Amish sugar cookies, or a plain hot milk cake. 😋
