White Rum Extract Vanilla Pairings
Two of our top-3 rum recommendations for extract making are white rums. What's the difference between white and dark rums? Mostly just the aging.
Dark rums are dark because they are aged in wood (usually oak) casks for a longer period of time and they take on the smokey, vanilla, caramel flavor notes of the oak. Where as a white rum is either not aged, or just slightly aged - sometimes in a stainless steel cask. The result is a clean, less smokey rum that comes from the same sweet sugar source as dark rums.
So when you want to add additional sweetness to your extracts without a lot of extra taste, using a sugar-based white rum will sweeten them up. And the following list of vanilla beans are those that we have found to pair beautifully with white rum.
