Hi Teresa! You absolutely can! Add the pecans for 1-2 months then remove them and taste test. If you want more pecan flavor, add a new batch of pecans for another 1-2 months.

Sometimes pecans will absorb the alcohol, so make sure your vanilla beans stay submerged and don’t be afraid to “top off” the bottle with the same alcohol you started with to keep the fluid level the same. Happy Extracting!
