L’avantage de l’extrait de cannelle est qu’il peut être utilisé dans presque tout ! C'est un délicieux ajout à de nombreux produits de boulangerie : pains, scones, muffins, tartes, biscuits. Il est également parfait pour accompagner les cafés ou les chocolats chauds pour leur donner un petit coup de fouet. Ou peut-être qu’une touche peut être ajoutée à votre cocktail d’automne ou d’hiver préféré.
Contrairement aux gousses de vanille, que vous pouvez essentiellement laisser indéfiniment dans votre pot d'extrait, les bâtons de cannelle ont tendance à avoir un goût amer s'ils restent trop longtemps dans la vodka. Puisque nous ne voulons pas d’extrait amer, retirez les bâtonnets une fois que votre extrait a atteint la force appropriée. Vous le saurez à l’odeur et à la couleur – ce sera d’un joli brun riche et très parfumé.
Ingrédients
- 4 bâtons de cannelle entiers (Nous recommandons la cannelle de Ceylan trouvée ici. )
- 2 tasses de vodka, sans saveur
- Pot de 1 pinte avec couvercle
Instructions
- Placez vos bâtons de cannelle dans votre pot de pinte ou votre récipient de fabrication d'extraits. Vous devrez peut-être les casser en deux pour les adapter.
- Versez la vodka en vous assurant que les bâtons de cannelle sont complètement immergés.
- Couvrir et laisser reposer dans un garde-manger 4 à 6 semaines jusqu'à ce qu'il atteigne la force désirée.
- Retirez les bâtons de cannelle et profitez de votre extrait !
Remarques
- Vous pouvez réduire de moitié cette recette pour obtenir un plus petit lot d’extrait, ou doubler ou tripler pour en obtenir plus.
- Une fois que votre extrait a atteint la force souhaitée, retirez les bâtons de cannelle. Les bâtonnets laissés trop longtemps dans la vodka deviendront amers et ruineront votre extrait.
- Le temps exact d’infusion de votre extrait dépend de la force et de l’âge de vos bâtons de cannelle et de la force avec laquelle vous aimez votre extrait.

Hi Kim, Saigon (also known as Cassia) cinnamon would also work equally well in this recipe! It will just give you more of that spicy cinnamon flavor, whereas Ceylon cinnamon has a softer fruitier taste. Happy Extracting!

Hi June, that is a great question, thank you for asking! I’m sorry you’ve tasted too many bitter extracts though :-( We recommend putting 2-3 drops of extract into milk/cream to taste test. It really depends on the type of extract that you are making as to how long the extraction will take but it’s ready whenever the flavor is good to you!

Hi Amber, great question! You can use Everclear, you’ll just need to make sure it’s diluted to 70-100 proof.

Good question. We believe the cinnamon sticks would keep their quality for about 6 months but are still “good” for much longer. Since you physically have the cinnamon sticks, I would say you’re likely the best judge about them. :) Happy extracting!
