Every kitchen has its staples. Salt. Pepper. Olive oil.

In mine, homemade vanilla simple syrup has earned a place right alongside them.

I always have a bottle waiting in the refrigerator because I use it almost every day. It takes just minutes to make, lasts for weeks in the refrigerator, and adds just the right touch of sweetness and vanilla flavor whenever I need it.

Once you start keeping it on hand, you'll find yourself reaching for it without even thinking. A splash in your morning coffee. A drizzle into iced tea. A spoonful over fresh fruit or yogurt. Before long, you'll wonder how your refrigerator was ever without it.

It's one of those simple recipes that quietly becomes part of your everyday routine.

Unlike granulated sugar, vanilla simple syrup dissolves instantly into hot or cold drinks, making it perfect for coffee, tea, lemonade, mocktails, and sparkling water. And because it's already infused with homemade vanilla, every spoonful adds both sweetness and flavor.

I also love leaving drinks unsweetened until serving. Everyone can add just the amount they like, whether it's to a glass of Strawberry Basil Cold Brew Tea, an iced latte, or even in chocolate milk for a chocolate vanilla treat. The kiddos love this one!

Once you have a bottle in your refrigerator, you'll start finding excuses to use it:

  • Coffee and lattes
  • Cold brew
  • Iced tea
  • Lemonade
  • Sparkling water
  • Italian sodas
  • Mocktails and cocktails
  • Smoothies
  • Yogurt
  • Oatmeal
  • Fresh fruit
  • Pancakes, waffles, and French toast
  • Ice cream
  • Cheesecake
  • Pound cake
  • Fresh berries

It starts with just four simple ingredients and a few minutes on the stove, but it quickly becomes one of the hardest-working jars in your refrigerator.

Homemade Vanilla Simple Syrup

Ingredients

  • 1 cup water
  • 1 cup granulated sugar
  • 1 tablespoon light or dark brown sugar
  • 1 tablespoon homemade vanilla extract

Instructions

  1. Combine the water, granulated sugar, and brown sugar in a small saucepan.
  2. Heat over medium heat, stirring until the sugars have completely dissolved. No need to boil. The brown sugar adds a little extra caramel notes to the syrup
  3. Remove from the heat.
  4. Stir in the homemade vanilla extract.
  5. Cool completely and pour into a clean glass bottle or jar.
  6. Refrigerate for several weeks.

One tip: Always stir the vanilla in after removing the pan from the heat. It helps preserve the beautiful aroma and flavor of your homemade extract.

Sometimes the simplest recipes become the ones you use the most. This is one of them.
