Nicaraguan V. Pompona Vanilla Beans are practically born to be paired with dark, aged spirits. Its rich, fruit-forward character harmonizes magnificently with the dried fruit and oak notes found in brandy and cognac, while its deep sweetness complements both white and dark rum with elegance. For homemade vanilla extract, use the ratio of 1oz of beans for every 8oz of alcohol. For dark spirits such as brandy, cognac, and dark rum, age your extract 18 months to 2 years for optimal flavor development. For white rum, age up to 1 year.
