Hi Courtney, you can for sure make coconut extract without vanilla, just add 1 cup of rum to 3/4-1 cup of unsweetened shredded coconut, making sure that the coconut is fully submerged in the rum. Give the jar a good shake every day and leave to extract for a couple of weeks, or until it is as coconutty as you would like!
If i wanted to just make coconut extract with not vanilla how would I go about that
Hi Jo! The coconut does absorb some of the alcohol during extraction but you can expect to get at least 7 ounces of extract if you use 8 ounces of rum as per the recipe :-)
How much coconut extract did you get from the original alcohol that was put in?
