A Taste of Sunshine: Layered Lemon Delight

Some desserts are more than just sweet treats—they’re stories passed down through generations. This layered lemon dessert is one of those for me. It brings back memories of warm afternoons in my grandma’s backyard, the scent of lemons hanging in the air from the old tree with the tire swing tied to its branch. That tree was the heart of our summers, and this was my mom’s go-to recipe for every family gathering. With its nutty crust, creamy layers, and that signature lemony brightness, this dessert tastes like home, sunshine, and love—all in one bite.

Crust:

-2 cups flour

-1 cup butter

-½ cup ground nuts (your favorite)

-Blend like pie crust.  Pat it down into the baking dish. 

-Bake at 350 in a 9x13 baking dish until golden brown (20-30 minutes). Cool completely.

 

Layer 1:

Mix until smooth and spread over the crust:

- 2 cups powdered sugar

- 2 oz stiffened cream cheese

- 2 tsp of Vanilla

 

Layer 2:

- 1 cup crushed honey granola

 

Layer 3:

- 2 small instant lemon puddings

- 2 cups milk

- 1cup lemon juice

- Beat until smooth 

 

Layer 4:

- Cool whip OR fresh whipped cream sweetened with vanilla sugar.
