The Chef's Choice Vanilla Extract Kit is the primary kit for chef's (and experienced cooks) that use a lot of vanilla extract very often. - 2oz of grade-A vanilla beans from the country of your choice (typically 6-10 vanilla beans in an ounce)

The only thing we can't include in this kit is the spirit because, well, it's illegal for us to do so! You will need to run down to your favorite shop and pick out the spirits that are best for you. Personally, we really like white rum, bourbon and vodka.
Think of those three spirits like a sweetness scale. Rum is sugar based, so it's very sweet...the most sweet. Bourbon comes from corn, so it's sweet...but less sweet than rum. Vodka is grain based and almost flavorless, so it's the least sweet. Vodka is generally the best for allowing 100% of the more-than 300 flavor compounds of a vanilla bean to come through, unmasked.

Making vanilla extract is simple: Just add beans, spirits and a lid...then wait for a few months. You may need to cut your beans into smaller pieces to fit into your bottle. We also recommend slicing the bean pod down the middle so the seeds inside the bean are fully exposed. (This equates to faster extraction). Once each bottle is filled, store the vanilla extract in a cool place (65 degrees or so) and away from any sunlight. Watch as the extract slowly turns to a dark amber over time.
Remember, pure and real extract is an amber color. It isn't dark, cloudy and non-transparent. Many extract manufacturers infuse their extracts with corn syrup and other sugars and color additives...because it's cheeper and doesn't require as much time to extract. Real extract isn't rushed.
