]]>The warmth of cinnamon, the deep richness of chocolate, and the sweetness of vanilla all in one extract! The use of Mexican vanilla beans in this recipe provides notes of spice, sweet buttery vanilla, and hints of mocha. It can be used in both sweet and savory dishes. It will add a new depth of flavor to your chili’s and stews. Use it when a cake or cookie recipe calls for vanilla extract. Add a teaspoon or two to your hot cocoa or coffee. Just imagine the enchanting impact this extract will have in your baking and cooking!
Makes approximately 18-24 ounces of extract
Extract time: 12 months
Jar size: 32 ounces [quart jar]
Ingredients:
3 ounces Mexican Vanilla Beans
24 ounces 80-100 proof Vodka
6 Cassia Cinnamon Sticks
1 cup Gourmet Cacao Nibs from Peru
Instructions:
Place 1⁄2 cup of cacao nibs in the jar. Reserve the remaining 1⁄2 cup for next month.
Place 4 cinnamon sticks in the jar, standing up along the side of the jar, leaving space for the vanilla beans. Reserve the remaining 2 cinnamon sticks for next month.
Cut the vanilla beans in half, this helps ensure that they will stay submerged during extraction, and place them in the jar. Then pour the vodka over all the ingredients, making sure everything is fully submerged in the alcohol.
Seal the jar tightly and store it in a cool/dark place for 1 month.
After Month 1
Remove the 4 cinnamon sticks and cacao nibs by pouring the extract through a strainer. Return the extract and vanilla beans to the jar.
Add the reserved 1⁄2 cup of cacao nibs and 2 cinnamon sticks to the jar. *At this time you may choose to replace the vodka that the cinnamon and cacao nibs have soaked up. Bringing your extract back to the original 24 ounces of vodka.
Seal the jar tightly and store it in a cool/dark place for 1 month.
After Month 2
Remove the 2 cinnamon sticks and cacao nibs by pouring the extract through a strainer. Return the extract and vanilla beans to the jar.
Seal the jar tightly and store it in a cool/dark place for an additional 10 months.
After Month 12
Taste test the extract by adding 1-2 drops of extract to 1 tablespoon of milk or milk alternative [or by placing 2-4 drops on a sugar cube] letting sit 3-5 minutes before tasting. If you like the taste, then your extract is now ready for use. If not, continue to store and taste test at 1-month intervals.
When ready to use, either remove the beans or leave them in if preferred, ensuring that they are cut small enough to remain submerged in the alcohol.
Use a 16oz jar or larger.

-1/4 cup fenugreek seeds to start
-12-14 oz vodka or white rum
Instructions:
1. Warm fenugreek seeds on very low heat
just until you can begin to smell them. Do
not burn, they will get bitter.
2. Remove from heat and add the seeds to a 16oz jar.
3. Pour the alcohol into the jar. As the seeds absorb the alcohol, add a bit more to
cover.
4. Shake periodically and store in a cool place.
5. Strain after 4 weeks and repeat the process until you get the maple taste you desire.

Memories of Mistletoe Extract
This extract invokes memories of the holiday season for me. I love the warmth of the coffee flavor, and the delicious combination of vanilla, cinnamon and cloves. Think of using this extract in caramels, brownies, custards, fudge, whipped cream, etc.
Ingredients
½ ounce The Mavea Vanuatu vanilla beans from VanillaPura (1 oz. for an extra vanilla kick)
½ c. coffee beans
5 or 6 The Kandy Ceylon cinnamon sticks from VanillaPura
1-1/2 t. The Betafo cloves from VanillaPura
12 ounces Gosling’s Black Seal Rum
16 ounce bottle or jar
Directions
Split ½ oz. vanilla beans (I use Mavea Vanuatu, but use any that would go well with coffee or sweet spices), and add them to the jar. Crack coffee beans (I use a rolling pin or a mortar and pestle to give them a light crack), add them to the jar. Break or leave whole the Ceylon cinnamon, and add it to the jar along with the cloves. Cover with 12 ounces of Gossling’s Black Seal Rum (or a dark rum of your choice), cover and store in a cool dark place for three to four weeks. Remove the coffee beans and exchange them for freshly cracked beans, check the flavor of your extract (in sweetened milk, cream or whipping cream) for the other spices, and remove them or leave them in according to your taste (I remove the cloves at 4 weeks, but add another fresh cinnamon stick). Leave the vanilla beans in indefinitely for added flavor. Your extract should be complete in 6-8 weeks.

8-Week Update
Ingredients:
1. 1 oz Madagascar Vanilla beans
2. 1 oz Tahitian Vanilla beans
3. 8-16 oz vodka or white rum
Instructions:
-Split the beans and remove the caviar into a small bowl or mortar n pestle
-Lightly crush the seeds
-Add the lightly crushed caviar along with the pods to your jar and cover with the spirit of choice.
-Let set and extract for 12-14 months, shaking occasionally
-When ready to decant, remove the pods, but don’t filter the extract
Uses:
Ice cream, cheesecake, custards, whipped cream, frosting, cookies, anywhere you want the specks to shine along with that vanilla rich flavor.

This blackberry limoncello is sweet, tart, and the perfect addition to any springtime grown-up gathering. It’s especially nice over ice with a splash of hard seltzer but would also be delicious with ginger ale, Prosecco or champagne. You can store it in the refrigerator, but many keep it in the freezer. Cheers!
Ingredients:
for the limoncello:
-12 lemons
-190 proof grain alcohol, enough to cover the lemons in a quart jar
- ½ sugar
- 1 cup water
For the blackberry juice:
-1 cup blackberry juice
-½ cup of sugar
-1/4 cup lemon juice
Instructions:
I used a potato peeler, be sure to be light handed as to not peel any of the pith.
**The peels can be dehydrated and added to granulated sugar for lemon sugar or salt for lemon salt.**
Add 1 cup water to ½ cup sugar and heat until dissolved. Add cooled simple syrup to one of the halves of set aside limoncello and taste. I left mine semi-sweet, not sweet enough to enjoy on its own.

Cowlua... a little farm humor from Nebraska! You gotta try this Kahlua recipe. It takes a little longer to brew, but all good things come to those who wait. Sweet Cowlua dreams!
Ingredients:
-2 1/2 Cups Strong Black Coffee
-2 1/2 Cups of good Vodka
-2 Cups Sugar
--1/2 Cup Vanilla Bean Sugar
-1oz Whole Vanilla Beans
1/4 Cup Whole Coffee Bean
Instructions:
-Start by adding the sugar to the brewed coffee, stir until dissolved. Brew your coffee strong but not bitterly. A good medium bodied arabica coffee is a great option. Or use your favorite kind of coffee. Adding whole coffee beans enhances the flavor. And decaf is always an option if that’s your preference.
-Add vanilla beans, cool completely
-Add whole coffee beans (optional)
-Stir in the alcohol
**You can make this in a gallon jar then strain and re-bottle for gifting. The brew time is about 6-8 months giving the vanilla time extract. When bottling, you can remove the vanilla beans and keep them for yourself or divide the beans between the bottles and gift them with the Kahlua. Starlette makes a different version each year for her adult kids.

1) Change the cacao nibs, coconut, and almonds out twice during the extracting process, and expect it to take 4-6 months to be completed.
